Santa Yogurt Pancakes

A festive breakfast recipe to enjoy during the Christmas holidays.

Ingredients

Pancakes

  • 40g oats
  • 1 medium egg
  • ½ ripe banana
  • 2 heaped tbsp natural Irish yogurt
  • 2 tbsp self-raising flour
  • Oil of choice, to fry

Christmas Toppings

  • Irish natural yogurt
  • Bananas, sliced
  • Strawberries
  • Blueberries
  • Maple syrup or honey, to serve

Method

To a blender, add the oats, egg, banana and yogurt. Blend until smooth and stir in the 2 tbsp of flour.

Heat a large non-stick frying pan over medium heat and lightly grease with cooking spray or a little oil.

The mixture will be wet, so it is easiest to pour out onto the pan.

Cook for 2–3 minutes until bubbles begin to appear and the bottoms are golden. Flip and cook for another 1–2 minutes until cooked through.

Repeat with the remaining batter. The recipe makes approximately 8 pancakes.

To decorate: spread Irish natural yogurt around the lower half of the pancake for Santa's beard.

Arrange 2 banana slices and a blueberry on top for his eyes.

Use half a strawberry to create Santa's hat with some yogurt for the top and bottom, and add a small piece of strawberry for the nose.

Serve with a drizzle of honey or maple syrup.
