Preheat the oven to 200°C. Line a tray with baking paper.
In a food processor, blitz the cheese (reserving a small handful for the topping), flour and butter until you get a breadcrumb consistency. Alternatively, grate the butter and use your fingertips to rub the butter, cheese and flour together until you get a breadcrumb consistency.
Crack the egg into a small bowl or jug and add in the milk. Whisk lightly with a fork.
Pour in the milk mixture bit by bit and mix until a soft dough forms using a butter knife (you might not need all the milk). Once the mixture starts to come together, get your hands in there to bring the mixture into one dough ball.
Place onto a floured surface and bring the mixture together into one dough ball. Flatten slightly and cut into triangles.
Brush the tops of the scones with the remaining milk mixture and add some extra grated cheese on top. Bake for roughly 12 minutes until puffed up and golden on top.
Don’t forget to ask an adult to help you with cutting, the oven and of course, cleaning up!
